Yes! You have no end of options when it comes to overriding options.
I would make a local file in my project named config/plugins/plugin-name.js -- that file should export a function that returns an object literal with a "config" property.
I'd show an example but I'm tapping from a phone.

It's super simple right now. Eventually it would be awesome to get all the autocomplete and file upload goodness that GitHub.com has, but…someday.
